6 WINTER 2018 Sugar and Spice and Everything Nice Dense, ginger-spiced cookies flavored with molasses or honey date back to the Middle Ages, when intricately carved boards were used as tem- plates to make fanciful shapes. Sold at fairs, these treats became beloved holiday traditions. Now is the perfect time to get out your rolling pin and get rolling on some gingerbread cookies! Here’s one of our favorite recipes: EASY GINGERBREAD CUTOUTS Ingredients: • 1 package spice cake mix • ¾ cup all-purpose flour • 2 eggs • 1/3 cup vegetable oil • 1/3 cup molasses • 2 tsp. ground ginger • ¾ cup cream cheese frosting • Red Hots candies Instructions: • In a mixing bowl, combine the dry cake mix, flour, eggs, oil, molasses and ginger. Mix well. • Refrigerate for 30 minutes. • On a floured surface, roll out dough to 1/8”thickness and cut with cookie cutters dipped in flour. • Place on an ungreased baking sheet and bake at 375º for 7-10 minutes (until edges are slightly firm). • Cool on a wire rack and then deco- rate with the frosting and Red Hots candies.
